Seriously good food has always been a given in Hong Kong, but in the last decade or so the city’s menus have made a gourmet quantum leap. Chinese cuisine naturally sits in pole position, but masterly chefs are also conjuring up meticulous and inventive new dishes taking inspiration from all around the world. Michelin cottoned on to the culinary bonanza taking place back in 2009 and has since scattered its particular brand of stardust over an eye-popping total of 79 restaurants. Here’s a bite-sized pick of the best.
Amber ** *
Not only does chef Richard Ekkebus deliver the finest of French fine dining at Amber in the Landmark Mandarin Oriental, but there’s a vegetarian, dairy- and gluten-free menu with reduced salt and sugar, too, hence the coveted Michelin green star. Attention to detail is the watchword here. “Of course, we have a full batterie de cuisine, but my favourite is the Mason jar,” says Ekkebus. “At Amber, fermentation is often utilised to capture and amplify the flavours of using soy, rice, cereal and nut milk, along with the umami-ness from the natural ingredients.”
